Hey lovely Movers! When I woke up to dreary weather this morning I was pretty gutted. I mean, it’s supposed to be summer right? Where is our beloved sunshine?
As I went downstairs to brew my coffee I started thinking about things that are comforting on days like this. Things like, warm bevvys, my dad’s famous chili, a big comfy jumper, or the best of the best – my grandma’s banana bread.
That stuff is to die for.
Since my grandma unfortunately lives 5,000 miles away I can’t exactly convince her to whip up a batch of it for my comfort on this rainy day, so I figured I may as well make a batch myself. Instead of her usual recipe though we’re going for a Paleo-friendly version today!
If you’re looking for a nice, warm bit of comfort food to enjoy today, then this Paleo Banana Loaf is just what you need (and bonus: you likely already have all of the ingredients!).
Paleo Banana Loaf
½ cup coconut flour (or 1 cup of ground almonds)
1 large ripe banana
10 dates, chopped
1 cup of crushed walnuts
2 tablespoons agave nectar (or honey)
1 teaspoon baking powder
1 teaspoon almond OR vanilla extract
Pre-heat the oven to 180°C.
Mix the coconut flour, baking powder and walnuts together in a bowl.
Mash the bananas with a fork in a bowl, then add the honey, eggs, almond/vanilla extract & chopped dates. Pour the dry mixture into the wet mixture and combine well.
Form a loaf in a baking pan (silicone ones are far easier than the metal ones) and place in the preheated oven for about 35 minutes or until a toothpick inserted the middle comes out clean.
