I don’t know if y’all are anything like me, but the meal I struggle to get creative with the most is lunch. My breakfast and dinners are always super satisfying, but I find my lunches are often so boring I don’t even fancy them when lunch time rolls around.
So in an effort to ensure I actually eat the lunches I have planned I’m trying to put together more exciting dishes. This is one of the recipes on the list for this week. I love the combo of chicken and fruit, so I know this one won’t disappoint!

Chicken and Mango Salad
½ lb. chicken breast;
¼ cup bell pepper, chopped;
¼ cup red onions, minced;
1 tsp. chili powder
1 mango, diced;
1 cup celery, chopped;
1/3 cup homemade mayonnaise;
Juice of ½ lime;
1 tbs. minced garlic;
Fresh coriander leaf; (optional)
Sea salt and freshly ground black pepper to taste;
Melt some coconut oil in a skillet placed over a medium-high heat.
Season the chicken with chilli powder, sea salt, and black pepper.
Cook the chicken breast in the warm skillet until it’s browned and cooked through (about 5 minutes per side). Take it out of the pan and let it cool down; then cut into cubes.
In a large bowl, combine all the remaining ingredients and mix well.
Season to taste and refrigerate for 1 or 2 hours before serving.
Garnish with fresh coriander to serve.
