Did someone say tacos?! Taco Tuesday is hugely popular back home in the states and it brings people a lot of joy (though that might be the margaritas!), so I figured why not make it a thing here?
The only difference (and bonus!) is that these tacos are totally Prime Mover Nutrition friendly. You can stuff these soft tortillas with whatever protein you’d like – we recommend beef, chicken, turkey mince, or fish. Once the protein is in, then it’s time to veg’ it out with lettuce, tomatoes, onions, sautéed peppers, and whatever else you fancy.
Primal Tex-Mex Tacos
Makes 4 tortillas
¼ cup water, plus 2 tablespoons water
2 tablespoons coconut flour
1 teaspoon lime juice
2 tablespoons coconut oil
¼ teaspoon baking powder
½ teaspoon cumin
¼ teaspoon chili powder
1 teaspoon chilli powder
1 teaspoon cumin
¼ teaspoon onion powder
¼ teaspoon garlic powder or minced garlic
½ teaspoon dried oregano
½ teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
Whisk together water, eggs, oil and lime.
Mix together coconut flour, baking powder, cumin and chili powder.
Slowly pour wet ingredients into the dry ingredients, whisking as you pour so lumps don’t form.
Heat several tablespoons of coconut oil over medium high heat. When the oil is hot, pour 1/4 cup of batter in the pan, tilting pan so the batter spreads thinly.
Let the batter sit untouched for one minute then put a lid on the pan and cook one minute more. Flip the tortilla and fry for 2 more minutes. Mix the Taco seasoning together, season meat and cook as desired. Serve with salad.
I feel it’s important to add that a little birdy told me the tacos taste better if you eat them while wearing a sombrero, but I’ll let you see for yourself on that one 😉 Hope you enjoy!
