All I have to say about today’s recipe is – YUM! Who said packed lunches have to be boring? This is a perfect meal to prep ahead of time and take to work with you. It’s packed with flavour, protein, and healthy fats to keep you satiated for the whole afternoon.
I mean, what more could you want? 😛
Avocado Tuna Boats Recipe
1 can of tuna (strained)
1 ripe avocado
1 tbsp Dijon mustard
1 tbs of seasoning (e.g. garlic powdered, salt, pepper)
1 pickle chopped (optional)
1 slice crispy bacon for garnish (optional)
Cut avocado in half and remove seeds.
Spoon out meat leaving skins intact.
Put all ingredients, except for bacon, in a bowl and mash it all together well.
Fill empty avocado skins with the mixture and top with crispy bacon.
Serve with some steamed greens or salad.
