Hey Movers! Today I’m blogging from a totally different scenery than normal – sitting next to a huge window overlooking the sunrise in the Yorkshire Dales. Simply beautiful!
It may be sunny, but there is still a chill in the air, so I felt inspired to share a lovely warming breakfast with you all. This Quinoa porridge is super filling and Paleo-friendly as well. An awesome benefit of Quinoa is that it’s packed with protein and fiber too! Give your boring old porridge a kick to the kerb and enjoy this healthy sweet treat.
1 cup quinoa, rinsed
3 cups almond milk or coconut milk
½ teaspoon vanilla extract
1 teaspoon cinnamon
½ cup raisins
1 apple chopped small
½ cup raw walnuts
4 tablespoons sunflower seeds
Combine quinoa, milk, cinnamon, vanilla extract and raisins in a saucepan.
Bring to the boil then place lid on and reduce to low heat.
After 5 minutes stir in apple and simmer for around 5-7 minutes.
Cook until all liquid is absorbed Serve with toppings of your choice (e.g. blueberries/strawberries etc).
