Ahhhh! It’s September 1! Do you guys know what that means?!
It is time for all things…PUMPKIN!
If y’all know me, you know I love pumpkin. Absolutely LOVE it. For anyone who isn’t familiar with pumpkin, it’s similar to butternut squash, but way more delicious if you ask me.
And I just so happen to put it in anything and everything from Autumn to Christmas every year. I mean it tastes delicious and has amazing macros – what’s not to love really?
So I thought now would be the perfect time to share this amazing recipe, because it’s still warm enough for a smoothie, but we’re close enough to Autumn to crack the pumpkin out.
Pumpkin Pie Smoothie
1 cup of pumpkin puree
1 cup yoghurt or coconut milk
½ cup apple juice or water
1 tsp. pumpkin pie spice (you can make your own, as shown HERE)
¼ tsp. vanilla extract
1 cup of ice
Pecans, crushed (optional)
In a blender or food processor, combine all the ingredients except for the pecans and blend until smooth.
Top with crushed pecans, and serve in a large glass.
